Cantonese Chicken

Mr. Sillypants made a special phone call the other day from work just to thank me for making this dish.  The combination of fresh bell peppers, sweet pineapple, tender chicken, and a to-die-for sauce over fluffy rice calls for frequent repetition.  Plus, it's easy.

First, make skillet chicken.
Second, saute tri-color bell peppers and cubed onions with olive oil in a skillet.  You can also add chopped celery.
Third, make sweet and sour sauce.  Set pineapple aside.
Fourth, heat everything together, including the chunked pineapple.
