My husband does the grocery shopping in our family (I will forever praise him for it!), and every so often he'll come home with a box of 88 cent cake mix in whatever flavor is tickling his fancy at the time. Cupcakes are by far his favorite homemade treat, and we tend to "gourmet-ify" it with this frosting recipe. Although...he likes the cake part better than the frosting part; I'm the one who heaps on a generous portion!
1 square cream cheese, room temp
1 stick butter or margarine, room temp (I've used both; they both work!)
1/2 regular bag powdered sugar (enough to suit your desired thickness)
1 T real Mexican vanilla
Splash of milk
With a hand mixer, cream the butter and margarine until smooth. Blend in vanilla, then sugar a bit at a time. Stir in milk until you reach your desired thickness. Oh, heaven...it really is.
