1. Slice an eye of round roast, or any beef roast you'd like, in half.
2. Layer jarred sundried tomatoes, or jarred roasted red peppers, and feta, in-between and on top of the beef.
3. Sprinkle with salt and pepper. Maybe add a dash of balsamic vinegar.
4. Cook 8 hours on low and serve over egg noodles. The melted feta makes a wonderfully creamy sauce.
