This pasta salad saved my life one summer when my job had me in the car traveling a lot. I'd pack a huge tupperware-full in the morning, and it would last me through lunch and dinner. I was able to avoid drive-through joints, and still ate my vegetables!
Combine:
Penne or wagon wheel pasta, al dente
String cheese cut in chunks or petite mozzarella balls
Italian salad dressing or olive oil and balsamic vinegar with S&P
Variety of vegetables (I recommend tri-color bell peppers, tomatoes, matchstick carrots, and broccoli, which stay crisp under the pressure of a long day at work).
Toss and enjoy!
