Fruit Vinaigrette

A fruity vinaigrette is a fabulous topping for delicate salads or the sweet and savory mix in a green salad. 

Some of my favorite combinations:

Spinach, strawberries, ranchero or feta cheese, mushrooms, and toasted almonds
Mixed baby greens, raspberries, mandarin oranges, and sugared walnuts
Romaine, diced tart apples, shredded mozzarella, slivered almonds, and crasins

Homemade fruit vinaigrette:

Handful of frozen raspberries or strawberries
Healthy drizzle of olive oil
Good amount of red wine vinegar
Dollop of grainy mustard
Dollop of mayonnaise
Poppy seeds
Sugar
S&P
Other spice possibilities: Herbes de Provence, mint, parsley

Blend in blender until smooth.  Must use within about a week to prevent fruit from fermenting.
